Wedding Trends: Wedding Catering in 2016

It’s going to sounds a bit strange but beets are so popular right now! We’ve seen them on menus across the country and on shelves in specialty food stores but now they seem to be making headway in wedding catering! To uncover why beets have hit their stride, we asked the Elite Circle caterers what they think about this healthy and beautiful ingredient.

Why do you think beets have gained such popularity in wedding catering?

Fabulous Food Fine Catering & Events (John Johnstonbaugh, Fabulous Food Sales Catering Sales Consultant): I think beets have become so popular because of public, neighborhood, and home gardens. They are easy to grow, even in the heat of the desert, and people have realized that beets are delicious and good for you when they are fresh and natural…I think people were turned off by canned beets growing up and now that they have tasted how delicious they really are, they have gained popularity!

Fresh from the Kitchen: It’s a bit of a mystery but they’re versatile and pretty (and good for you!).

Heidi’s Events and Catering: We personally love them but there’s an upcharge for specialty ingredients like beets so they’re not as common as other ingredients. 
 
Fabulous Food Fine Catering & Events (Emily Phillips, Fabulous Food Sales Catering Sales Consultant): In general, wedding style trends seem to be slowly moving away from the soft blushes and pastels, toward deeper, richer colors.  Beets have a gorgeous jewel tone that complements many other accent pieces in today’s weddings.  Additionally, there’s more of an appreciation overall, not just in the wedding world, with healthy, nutrient dense ingredients. Beets are earthly yet delicious in a savory setting. Mixologists have also experimented with the beet. Like pomegranate and prickly pear, it gives a cocktail a beautiful color and a very unique taste that may not be reminiscent of a typical cocktail.

What other trends are you seeing in wedding catering this year?
Fresh from the Kitchen: Late night snacks. Everyone has to have these snacks, sweet or savory, to keep the party guests fueled and keep them on the dance floor and the like.

Heidi’s Events and Catering: Home style food is still big.  In spite of all the fancy Chefs on Food Network people still want food they recognize and know. More requests for Vegetarian and special diet options then ever before and more requests for non-alcoholic beverage options. 

Fresh ingredients will always be in style…I also hear many people asking about cooking food onsite which is entirely illegal unless there is an inspected commercial kitchen at the venue.

Fabulous Food Fine Catering & Events (John): Thank God the chicken dinner is dead!!!! I probably do twice as many proposals for fun stations, gastro pub or “Sophisticated Bar Food” now more than ever. I think Pinterest and the blogs have shared the idea of much more youthful and fun personalized approach to wedding and the celebration of the day, and less of “do what your parents did or what every else has done”. I love this because I have always told brides and grooms that, “A reception is the very first time you will entertain on a large scale as a couple and the reception should reflect you and who you are”.

(Emily): Food that is experiential. Guests appreciate and love becoming involved with action stations.  Sure, you could eat your yummy guacamole served to you, but isn’t it more fun to watch the ingredients meddled together with their garnish added? 

I’ve read recently that nostalgic foods are making a comeback for weddings. Food that evokes memory, like a recipe your grandmother used to make is especially significant on your wedding day. Sometimes these foods will be served family style on farm tables versus the traditional plated/buffet option at a round table.

And of course, the non-traditional dessert. Maybe not a new trend but certainly one that’s not going away just yet.  Macarons and donuts for everyone!  In general, couples seem to be leaning more toward a dessert table versus the traditional wedding cake.

Have you seen the phrase that declares, “A party without cake is just a meeting”? Well, since our lives revolve around all things wedding 99% of the time, we think cake is important. Like, really important. So it’s no surprise that our trend-spotting radar has been pinged by the recent trend of couples pairing mini wedding cakes with cupcakes – we like to call it the “Cake and Wannabe Cake” trend. It’s tasty. It’s adorable. And we love it!

One major benefit of the Mini Wedding Cakes with Cupcakes trend is that you can offer several flavors of cupcakes and if any of your guests have diet restrictions that you would like to be mindful of, it’s much easier for your baker to accommodate those needs.

Also, some couples just aren’t “cake” people so having a sweet little cake surrounded by all kinds of sugary treats is a fantastic option (and guests can get their sugar fix almost immediately by helping themselves instead of waiting for the cake to be cut)!

Wedding Trend: Tea Cocktails

While wedding planning, some couples can feel a little boxed in by the design and decor ideas they find while researching wedding inspiration. We completely understand- it seems like once an idea hits, all the national blogs talk about are the same thing over and over. Well, here at Phoenix Bride & Groom, we acknowledge hot wedding trends, especially the trends that make sense and help couples personalize their weddings, but we also aim to be just a bit ahead of the trends as well. So in that spirit, we’re telling you today about a unique take on the signature cocktail: tea cocktails.

Tea cocktails are exactly what they sound like- a cocktail made with hot tea and some other fun stuff. Some tea cocktails, after steeping, are then served over ice but some tea cocktails remain hot. Think of this trend as the newest take on more familiar hot cocktails like Spanish coffee and Hot Buttered Rum but with a modern twist.

This video from Four Seasons Resort Scottsdale at Troon North confirmed our hunch that hot tea cocktails were gaining in popularity:

Inspired by the environmental extremes of the Sonoran Desert, Two Birds With One Stone is a drink that can warm you up on a cold desert night or leave you refreshed after a round of golf under the sun. 

Mixologists at Four Seasons hotels and resorts around the world will be shaking, stirring, steeping and serving drinks inspired by these classic brews. 

Four Seasons Florence makes the Grog tea cocktail: a bright, citrusy drink is poured from a classic teapot and sipped from teacups. Ginger-infused rum, 23-year Zacapa rum and Amaro Nonino form the boozy base, while cranberry and lime juice along with house-made lapsang souchong syrup lighten up the drink with fresh top notes.

At Four Seasons Azerbaijan, the Aroma is served: Earl Grey tea, condensed milk, dark wine and rum, and cinnamon powder

I want Noelle Salinas to feed me. Like every day. What is your background in catering and what’s your specialty? For seven years I have been the owner and head chef of Fresh from the Kitchen, but even prior to that my first job was a banquet wedding server. I also free-lanced with other catering companies during college. This really allowed me to see the business ins and outs and work in the business before making it my career choice too. It is my passion and love! My specialty is custom creations. I like challenging myself and creating new flavors. My kitchen does not operate with a lot of recipes. This is a unique feature to my company, and perhaps my company alone. I feel when you cook with your senses, and you love what you do, having a standardized recipe creates standardized food. Thus, why use a recipe when I know how to cook the item by touch and taste? At Fresh from the Kitchen, cooking is from the heart not from a piece of paper. Each dish is delicious for this reason.

What do you see couples doing with their menus that you are really loving right now? Couples want unique stations and family style meals. It is all about not having boring wedding food, but unique and delicious food. They want wines and spirits, family recipes, and other cultures reflected in the dishes that they serve their guest. I love this trend! It allows for a lot of creativity and unique experiences for my clients.

If you could plan your dream wedding menu, what would it be? I loved themed events. I have a desire to a Great Gatsby themed event or wedding because of the opulence! So, the dream menu for such an event would consist of live stations for cocktail hour, and plated service for dinner. Dessert would of course be a lavish dessert table with petite French pastries, wedding cakes of several different sizes, and hand crafted truffles. Additionally, items like truffle oil, lobster, champagne, and the like, would be a huge component of the meal too. I love fancy events and over the top creations, so I have yet to do a Great Gatsby theme, and can not wait until I do!

We’re pretty sure Sabrina and Ben, whose wedding was at the hip and historic SoHo63 in downtown Chandler, laughed their way through their wedding day. Yes, there were sentimental moments too, but their lighthearted demeanor is infectious! 

The Wedding Style:vintage and modern with a touch of elegance and simplicity throughout. We wanted a small intimate setting complete with family and close friends…we chose vendors that aligned well with the “family feel” of our wedding day.

How They Met: The busy couple, both of whom worked night shifts, met on eHarmony. They didn’t live near each other at all (one was in Arizona, one was in Michigan) but managed to fall in love despite the miles between them and knew they had something special

The Colors: Royal blue was complimented by soft neutral tones and light blue; Ben and his brother attended rival universities (Michigan State and Michigan) so they use any opportunity to show their school pride (and keep the rivalry alive!).

The couple loves IPA’s and beer & wine tasting so they knew they wanted to incorporate San Tan Brewery into their wedding; the brewery catered the reception and the couple couldn’t have been happier!

Sweetness: Some of my favorite things about Ben are his caring heart, he is so genuine, humble, gorgeous. He does so many great things for other people and he never asks for anything in return. He has such drive, ambition, and determination, it is contagious. He is the best friend anyone could ask for, he is always my number one fan, he is the calm to my storm. I am a worrier and stress about everything. He has a way of holding me in his arms and making the world go away.
 
Sabrina’s kindness, willingness to put others before herself, loyalty, faith, beauty…who am I kidding? I love everything about her… we are just the amount of opposite to make us perfect for one another.
 
Favorite Moment: Our favorite moment(s) were just being able to both be so relaxed- everything just fell into place. We loved that our wedding was family oriented and we truly got to spend time with all of our guests which made it so much more special.

Your Jubilee Weddings and Events share some insights about the shoot: The concept behind this shoot was to turn every little girl’s dream tea party into the ultimate bridesmaids luncheon “Par-Tea”, complete with lots of floral, hanging tea cups, finger sandwiches, and of course tutus!  We wanted it to be just the right combination of sophistication and fun, with a dash of whimsy.

When it came to the colors of the shoot, we wanted to play with the Pantone color of the year, Marsala, and match it with vibrant pinks and soft creams.

Gold cake stands and glittery gold stationery products add just the right amount of shine while bright pink and ivory flowers soften the look

We love how there are tea cups hanging alongside the flowers to frame the space for guests; the cutest little flower girls indulged in their own par-tea too!

Your Jubilee: Floral flowed out of beautiful antique tea pots into mismatched cups and saucers.  Some of our favorite touches included beautiful vintage furniture, tea foam art and the charm pull cake, a bridesmaid tradition in the South.

Cake and sweets are a must at any bridal shower and Ruze Cake House made sure guests got their fill with a 2 tier cake (it was a pink velvet cake with cream cheese Swiss meringue buttercream), cupcakes, and hand-painted salted caramel macarons; the over-sized gold heart pillow adds a touch of whimsy that we adore!
